**Note: Original recipe called for 2 cups sugar for tossing in dough, but it was way too much.
Cream butter & sugar together on medium speed for about 2-3 minutes. Add yolks & extract; blend until homogenous.
Whisk together flour, crumbs, baking powder, & baking soda. Add to butter mixture & mix until it comes together (will be pretty stiff, so turn up the stand mixer to higher speed & it will eventually come together). Chill in refrigerator for 30 min.
Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a bowl, stir together 1 cup sugar & 1 tsp. cinnamon.
Scoop 1 oz. portions & flatten to a round cookie (original recipe called for 2 oz. portions, making a very large cookie, but I used my blue rubber scoop, which is 1 oz). Toss each cookie in cinnamon mixture & place on parchment-lined baking sheet. Bake for 6 minutes, then flip the cookies & bake an additional 6 minutes. Cookies will be very soft, so wait about 2 min. before moving them to wire rack, then cool completely & store in airtight container.
