This will make a lot of soup! Also soup is better the second day. I like to make one night refrigerate over night and heat the next night. Heat only what you want to eat. You don't want to over cook the potatoes.
Simmer for awhile. If you stick a fork in the potatoes and they are firm the soup should be ready.
