Beat egg until frothy for about 10 minutes on high. Add oil and buttermilk. Mix in for 30 seconds. Mix dry ingredients in a bowl and add to the mixer. Blend in for 1 minute.
Spray non stick spray on hot griddle. Flip pancakes after 3 minutes on each side.
