Saute onion, carrot and celery in butter. Cool.
Crush crackers into a large bowl.
Whip evaporated milk and eggs together. Add remaining ingredients. Pour over crackers. Mix well. Pour into greased 9 by 13-inch pan. Cover with foil. Bake 45 minutes at 350? then remove foil for last 15 minutes.
This recipe can be halved but why bother since left-overs don't last long.
