BREAD PUDDING:
1. Whisk eggs very well and set aside.
2. Heat cream with the sugar and cinnamon and vanilla. Heat until hot but not simmering. Whisk in eggs then strain and set aside.
3. Break croissants into pieces. Pour custard over bread and mix. Lets oak for 10 minutes (if different bread, let soak longer).
4 distribute into 9x13 baking dish and cover with foil.
5. Place dish in pan filled with 1 inch water.
6. Bake for 60 minutes on 400 degrees until knife comes out clean.
RUM SAUCE
1. Heat sugar, brown sugar, Apple juice, heavy cream and rum in a sauce pan for 5 minutes. Remove and with an immersion blender blend for 4-5 minutes.
2. Cool sauce and refrigerate until ready to serve.
