The Grand Marnier Souffle is the best of the souffles, beautiful, light and fluffy.
Rub the inside of a 2 quart souffle pan with butter, then dust with sugar. Separate 8 eggs at room temp. Beat egg whites with a pinch of salt. Put egg yolks in a bowl that is safe to heat. Add 2/3 c sugar and the grated rind of 1 large orange. With a wire whisk, beat the egg yolk mixture over a pan of hot water on medium heat until thickened. Remove from heat and stir in OJ concentrate and Grand Marnier. Then put bowl in refrigerator to cool and chill.
When you are ready to make the souffle, beat the room temp egg whites in a large bowl with a whisk until they are stiff not dry. Preferably a copper bowl. The egg whites will be shiny looking and stand in soft peaks on the end of the wire whisk.
Remove egg yolk mixture and stir if separated. Fold gently into whites. Pour into souffle dish. Bake at 350 20-25 minutes.
Dust top with powdered sugar.
