Very moist and tasty bread for breakfast. For a treat, slice and use it to make french toast!!
In a mixer combine the oil, eggs, sugar, and vanilla, add nutmeg and orange zest and mix. Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans for 1-1/2 hours at 300F. Check for doneness with a toothpick and cool 10 minutes in the pan. Sprinkle with sugar before or after baking, if desired.
Pecans also work with this recipe, bread freezes well and it''s an easy way to use extra fruit. Add a banana or a couple more apples to the mix if you like.
