Cook potatoes in salted water. Cool, peel and grate. Heat butter and cream of chicken soup. Stir together. Add sour cream, grated cheese, and salt and pepper to taste. Fold into grated potatoes.
Place in 9" x 13" pan sprayed with cooking spray
Bake at 325 degrees for 25 mins.
