Great home made raisin bread - best is toasted!
In one large glass bowl, put in flour and make a well.
Add about 1/2 the warm milk, then yeast, mix milk and yeast with fork, let sit for five minutes.
With large spoon, slowly mix a little of the surrounding flour into milk/yeast mixture, add the rest of the milk and mix well.
Add beaten eggs (leave the reserved eggs alone) and knead well with spoon or by hand, 5 minutes.
Add sugar, salt, cinnamon and mix.
Add butter and mix well (at least 10 minutes) by hand, mixture will be a wet and sticky.
Add raisins and integrate by hand, you should be having fun by now!
Place glass bowl and dough (covered by towel) in warm dark place (oven) to rise for 1 hr or doubled in size.
Punch down dough, flip and let rise again for 1 hr.
Beat down and split into two even amounts (for two loaves), place into prepared (buttered, or sprayed with cooking spray) bread baking pans.
Let rise again in loaf pans (uncovered) until the loaves look big enough to bake, almost as if they're at their ideal post-baked size!
While this last rising sequence is taking place, pre-heat oven to 375', obviously without the bread in there!
Gently move risen loaves into hot oven and bake at 375' for 20 minutes.
Remove loaves after 20 minutes, reduce heat to 350', brush loaves with reserved beaten egg mixture, bake additional 20 minutes (+/-) at 350', until golden brown.
Pull out loaves and let them cool a little on a wire rack, enjoy!
