Italian Spaghetti Sauce (and fermented ketchup)
Cut an x on the stem side of tomatoes. Blanch in boiling water for a few minutes until skins wrinkle. Plunge tomatoes into ice filled water bath. Peel skins. Remove seeds (most but not all) and squeeze liquid from tomatoes. Mash tomatoes with potato masher or blend with immersion blender (nicole's preference) to desired consistency.
Heat olive oil sauce pot and sauté onions, garlic and mushrooms.
For meat sauce option, brown ground beef or turkey at this time. Prepared meatballs can also be cooked in the sauce.
Add tomatoes, carrot, oregano, parsley, salt, pepper and 1/2 the basil. Simmer sauce. Cook down to sauce is desired consistency, approximately 30 - 60 minutes. Add 1/2 fresh basil and additional seasonings to taste.
Serve with zucchini or spaghetti squash noodles or in other dishes. Freeze leftover sauce for future use.
ADD ON Fermented ketchup recipe:
Use 1/2 c. of meatless tomato sauce from above. Blend well. Cook down to achieve a thicker consistency. Add:
1 TBL of coconut aminos
1 tsp fish sauce (optional)
1 tsp liquid from cultured vegetables
Blend ingredients together. Place in a tightly sealed jar. Leave on counter to ferment for 3-4 days. Place in refrigerator.
