This is the banana cake recipe that my Grandma Ober used to make, one of my favorite desserts from my childhood.
Cake:
1. Beat eggs in a mixing bowl.
2. Peel and mash three very ripe bananas.
3. Melt butter.
3. With an electric mixer, combine eggs, bananas, sugar, salt, vanilla extract and melted butter.
4. Sift together flour, baking soda and baking powder.
5. Combine dry ingredients with wet in an electric mixer on low setting until completely incorporated.
6. Pour into a greased and floured 9x11 in baking pan. Bake at 375° until done, about 25 minutes. A toothpick inserted into the center of the cake should come out clean.
7. Remove from oven and cool.
Icing:
1. In your mixer, or big mixing bowl, add 4 cups of confectioner (aka powdered) sugar.
2. Add 1 cup (2 sticks) of softened butter.
3. Add 2-3 teaspoons of vanilla.
4. Add 1 tbsp of milk.
5. Start your mixer (or beaters) on the lowest setting. Keep on low until the butter and sugar are incorporated and then kick your mixer up to medium high.
6. Once fully incorporated, after a minute or so, stop the mixer and check the consistency and taste. At this point your frosting may be a little dry. Add a little bit of milk, mix and check again.
7. Taste icing for flavor and consistency. If it is too dry or thick, add a little milk and mix again. Continue this process until it is how you like it.
