In pot on medium, heat oil then brown pork
Cook onion and garlic in 2 tbsp of drippings
Stir in salt, cumin, oregano, tomato, tomatillos, and chilis.
Add stock and bring to a boil
Return pick to pan, simmer covered 1.5-2 hours
Uncover pan, increase heat to medium and cook at a low boil for 20-30 minutes until sauce thickens
Stir in lime juice and serve over rice
