My mothers recipie
Soak the beans over night. Drain and put in a pot. Cover with water and put in one teaspoon of baking soda. Bring to a boil. Take off heat when it foams almost to the top. Drain and return to pot. cover with water and boil a second time. Drain and return to pot. Cover with water and bring to a boil a third time. Drain and return to pot. Add the onion that has been chopped and cover with water . Bring to a boil and reduce heat and simmer untill beans are tender (about one hour)
While the beans are simmering fry up the bacon and cut up into small pieces. Pour off the grease. Take beans off stove and add the bacon and sugar. Add a little hot water to the bacon pan and stir. Add this to the beans also. Add salt and pepper to taste and put all this into a cassarole dish and bake at 350 degrees until brown on top.
