1. Drain sauerkraut in sink for about an hour.
2. Peel and shred apple and potato in food processor. Add to skillet with olive oil and cook until soft.
3. Add sauerkraut to skillet and mix thoroughly. Add 2 TBSP brown sugar and white wine. Cook until reduced.
4. Taste and add more brown sugar if needed.
Serve with pork or smoked sausage.
