Sweet tasting. Makes a large amount of batter that is kept refrigerated and you can make a small number of fresh muffins whenever you like.
In small bowl, pour 100% Bran and cover with boiling water
Set aside
In large bowl, cream shortening and sugar
Add eggs and buttermilk
Sift dry ingredients except All Bran together
Add to Bran/Water mixture
Add All Bran
Mix only till moistened
Store in covered jars in refrigerator
To bake, drop by teaspoons into muffin tin
Bake at 400 degrees for 12 minutes
Will keep refrigerated for 4 weeks
