Add the 5 Tbsp of sugar, shortening and salt to a stand mixer or bowl and pour the scalded milk on top. Whisk until well mixed. Let this cool. Once cooled, add 2 cups four and mix by hand or with a dough hook. Add the yeast mixture and stir until well combined, then mix in the egg. Mix in 2 more cups of four until combined. Add 1-2 tbsp of flour to the dough until it is easy to work with (not sticky). Knead the dough on a lightly floured surface or with the dough hook on low speed for 10ish minutes until the dough is smooth and elastic (you can add extra flour if needed). Make a ball out of the dough, drop into a lightly greased bowl and cover. Let this rise until it doubles in size (about an hour). Once it is doubled in size, punch down and roll out on a floured surface into a rectangle about 1/4 inch thick. Spread the softened butter all over the dough. Then sprinkle the sugar and cinnamon evenly over the top. Roll the dough up tightly and cut into 12 equal pieces (string works the best) Bake at 350 for 25 minutes.
