For a family get-together.
Melt butter over low to medium heat. Add flour, salt & pepper.
Stir well till flour is all absorbed. Remove from heat.
Stir in half of the hot milk (1 cup) a little at a time while stirring fast to void any lumps.
Put back on heat, stirring constantly. Add 1/2 of the rest of the milk, cook for 2 or minutes.
Stir in all of the cheese, keep stirring till all the cheese is melted at medium heat.
Add more of the hot milk till desired consistency (some like it thicker, others thinner).
Poor in oven safe dish. Grate the rest of the cheese on top. Bake at 350 till very light brown on top.
