Very very easy potato soup
Place potatoes, onion, and celery in a large pot and fill with water just until water covers the potatoes. Bring to a boil. Once water is boiling, and potatoes are still firm, but have started to soften, add ribbles** Continue to cook adding water as needed until potatoes and ribbles are done. Pour off some of the water (leaving some as it adds flavor). Add enough milk to consistency you prefer. Add approx. 4 or 5 T. butter, salt and pepper to taste.
**Ribbles: Beat egg and gradually add flour, mixing well with fork. Ribbles can then be cut/broken into dime size pieces before adding to boiling mixture
