grandpa's chili
Chop onions, red and green peppers, and celery to bite size pieces. Remove seeds from jalapeno pepper and chop to small pieces. Put all veggies in a large bowl and set aside.
In a large pot, (do not drain any of the cans) dump in two cans diced tomatoes. Next, add two cans chili beans and a pinch of salt and pepper along with ½ the jar of chopped garlic. Add one can of pork and beans.
In a large fry pan, melt pads of butter to coat the bottom of the pan and put saute onions, peppers, celery, and the jalapeno till they begin to soften. When they are soft, dump them into the pot with the tomatoes and peppers. Turn up the heat until it boils, then lower to simmer for about 30 minutes. Add a pinch of salt and pepper to taste. Open the pork sausage log and put it in to the frying pan and begin to break it up into small pieces. Brown the sausage, drain off the grease and set aside. Cut up the beef into bite size pieces. Coat the frying pan with butter again and add the beef along with the rest of the jar of garlic. When the meat is browned, sprinkle some flour on while stirring to soak up the juices. Keep adding flour slowly until all the juice is soaked up and when the meat is just pink inside, stop with the flour. Stir in the browned pork sausage and remove all from heat. Stir the meat into the pot with the veggies and tomatoes. Turn up the heat to boil. Add coriander, oregano, chili powder, salt and pepper to taste. Add one can of beef broth.
When the pot comes to a boil, lower the heat to a simmer and test taste for seasonings. You may want to keep adding chili powder over the next 45 minutes while simmering until you have it the way you like it. We usually use about 7 tablespoons and evidentially the Domek clan likes it good and spicy. After simmering 45 minutes, let it cool and enjoy. Yes, it makes a lot which gives a better blended flavor and it freezes well.
