in a large bowl mix together oats, nuts, seeds, coconut, cardamom and salt
in a small bowl combine honey or maple syrup, oil and vanilla
pour liquid over oat mixture and stir with wooden spoon or spatula to combine
spread onto parchment-lined baking sheets
bake for 30 minutes or until golden, stirring occasionally
remove from oven and mix in cranberries or raisins
place the pan on a wire rack and let granola cool to room temperature
store in an airtight container
