A nut, oats, and coconut granola with honey baked in.
Combine oats, nuts and coconut in large bowl. Pour in oil, mix. Pour in honey, mix until all ingredients are well coated. Prepeare an 11" x 15" pan spraying the inside with cooking oil spray. Spoon granola mixture into pan and even out. Bake at 250 - 300 degrees. Bake for 20 minutes, remove pan and stir. Bake another 20 minutes. Repeat until oats are a nice golden brown. Let cool for a few minutes and while still warm spoon into glass or heat resistant plastic container.
Don't let the granola cool too much in the pan as the honey will cause the oats to form a hard layer in your pan. Removing the granola before it cools ensures easier spooning and easier cleaning. This is a high calorie recipe for the weight conscious. 1/2 cup is around 300 to 350 calories so be aware.
