In the morning:
Line a 9 by 13 pan with foil then mix in the bottom - 3 cloves of
garlic, 1 1/2 T dried oregano, 1 T dried parsley, 1/4 c olive oil, 1/4
c red wine vinegar, 3 bay leaves, 1/2 c brown sugar and 1/2 c Welch's
white grape juice. For the white grape juice I just bought the
concentrate and put a heaping spoon full of it in there. I had enough
liquids that I didn't need to mix up the grape juice.
When you are ready to cook the chicken. Turn each chicken over in the
pan. Put the pan in the oven before you turn in on. Then preheat the
oven to 350 and cook for about an hour - checking for doneness after
40 mins. I used chicken tenderloins and it was great cause the
marinade came up over the chicken chunks. It is a sweet chicken dish
and suggests you serve with rice but I just did a potato dish!
