Sift flour and salt together in a mixing bowl.
Combine egg yolks and water. Stir into flour mixture.
Knead until smooth (about 5 minutes).
Cover lightly and let stand for 20-30 minutes.
Divide into 2 parts; roll each part on floured cloth until paper-thin. Roll dough jelly-roll fashion; slice evenly into narrow strips. Separate and straighten strips.
Let stand until thoroughly dry, about 4-6 hours.
Store in cool, dry place.
When ready to cook, drop into rapidly-boiling liquid and boil until tender. 10-15 minutes.
If dough seems too dry to handle, gradually add a little more water a few drops at a time. Do not add any more water than is ABSOLUTELY necessary. Dough will not hold together until kneaded.
