A very easy, delicious, and hearty gluten free soup!
1) In a large sauce pan, saute the shallots & garlic in the olive oil.
2) Add broth, heirloom tomatoes, rosemary, black pepper, salt, and red pepper.
3) Bring to a boil and then let simmer for 8-10 minutes to soften the heirloom tomatoes. (Heirloom tomatoes are meatier than traditional tomatoes so they need some time to soften.)
4) Add lentils and beans and and simmer another 8-10 minutes. If the soup seems too thick for your liking add a bit more broth.
5) Add spinach and cook until wilted (about 2 minutes).
Makes about four bowls, about 1.5 cups per bowl/serving.
