1. Soak beans overnight in water with 1 t. of baking soda. Drain water and rinse beans.
2. Saute onion, garlic, and carrot in oil: add beans, peppers, water, and ham bone, and simmer 4 to 6 hours.
3. De-bone ham. Add salt and pepper to taste.
