Sauté, or if willing/able to, Grill bell peppers in small amount of olive oil. 5-10 min.
In a medium sauce pan, mix corn, diced bell peppers, diced cucumbers, diced onion, and minced garlic, salt and pepper. Cook on low-medium for about 15-20min.
Meanwhile, cook chicken as preferred (tastes best on grill). Make sure it’s at least 155-160 degrees. Season with salt, pepper, garlic powder, and onion powder.
Once chicken is done, let rest 5-10 min. Meanwhile, dice tomatoes and mix into corn mix for about 2 min. Then stop cooking. Add about 1/8 - 1/4 cup of Newman’s dressing. Then put corn mix on plate. Place chicken breasts over corn mixture. Sprinkle feta cheese over top.
