1. In a large bowl, combine the tomatoes, cucumber, olives, onion, garlic, remaining olive oil, lemon juice, oregano and parsley. Season with salt and pepper to taste.
2. Preheat gas or charcoal grill to medium high heat.
3. Put chicken breast on cutting board. With your hand flat on top of it, carefully slice the chicken in half horizontally. Repeat with other breast. Season with salt and pepper. Brush with 1 tablespoon of olive oil.
4. Add the chicken to the grill and cook until brown and cooked through (165 F)..
5. Serve chicken immediately, topped with the tomato mixture and feta.
