Loukoumades, one of my favourite Greek pastries, are sweet fritters (similar to doughnuts) that are deep fried till golden brown and served warm with a honey syrup, sprinkled with cinnamon and nuts. These light airy, crispy pastries are the perfect dessert for a celebratory meal. Just be prepared to get deliciously messy when eating these purely yummy puffs.

1 (1/4 oz) packet Active dry yeast
1 tablespoon Sugar
2 cups Warm water (105-115 degrees F), divided
1 large Egg at room temperature
3 cups All-purpose flour
1/4 teaspoon Salt
1/8 teaspoon Nutmeg freshly ground
1 teaspoon Vanilla extract
Vegetable oil (preferably safflower) for frying (or, other high temperature oil)
1 cup Honey
1/2 cup Water
1/4 cup Sugar
1 tablespoon Lemon juice freshly squeezed
1 teaspoon Lemon zest grated
1 teaspoon Ground cinnamon (or 2 teaspoons) to taste
1/4 cup Walnuts finely chopped

Chelle0069They were good, though I preferred them with just the cinnamon and sugar on them, the honey sauce just didn't do it for me. all in all, the kids liked them and compared them to "elephant toes" at the fair. who doesn't like fair food.
lisamarr-turnerBetter for making falafels. They don't rise completely in to round puffs; however, they are still very yummy and best when eaten fresh and warm. I sprinkled a little powder sugar on mine and it was a perfect finish.
