1. Combine lemon juice, garlic, 3/4 tsp salt, 1/2 tsp pepper and oregano in bowl. Slowly whisk in oil until thoroughly incorporated.
2. Toss meat with 5 tbsp vinaigrette . Place in baking dish and bake.
3. Add crumbled feta to remaining 2 tbsp vinaigrette mixture. Poor mixture over chicken.
4. Toss arugula and olives with remaining 1 tbsp vinaigrette. Season with salt & pepper to taste. Serve greens with meat and pita.
You can use or chicken or beef in this recipe, and you can grill or baked the cubed meat.
