Use a thick preferably non-stick baking plate.
Brush and wash the potatoes. Cut the potatoes in the shape you like and let them sit in water for 10 minutes. Then, dry them well.
In a bowl, mix the potatoes in the olive oil. Add the greek spices. See the greek spice recipe.
Take the plate out of the oven. Oil it and place a single layer of potatoes.
Bake the potatoes become golden, approximately 20 minutes.
Using the spatula, flip the potatoes
and bake for another 10 minutes.
Use paper towel to absorb excess oil if necessary.
