Cook quinoa according to instructions( I use rice cooker). Cool. Toss sliced onion, peppers, and zucchini with olive oil and salt and garlic plus. Grill on BBQ, keeping vegetables a little crisp. Let cool and cut into small bite size pieces, add to quinoa.Add garlic, cilantro lemon juice and zest, and onion together. Add feta and dressing.
