1. For the dressing: Whisk together vinegar, lemon juice and salt in a sm. bowl about 10 sec. until salt dissolves. Add oil, oregano and pepper and whisk until slightly evenly colored.
2. For the salad: Place the 1st 6 ingredients in a lg. bowl. Remix the dressing and pour around perimeter of bowl. Gently toss to coat evenly.
Scatter olives and cheese over top and serve immediately.
