2. Fry onions gently in oil until soft. Add the mince and parsley, stirring until the meat is browned. Add the tomatoes, season with salt and pepper and simmer for 5 minutes.
3. Peel and thinly slice the potatoes. Place a spoonful of the meat mixture in the bottom of a greased ovenproof dish (1L capacity). Place a layer of potato slices over the top, then spoon a little of the meat mixture over the potato. Layer until all the mixture is used, finishing with a layer of potato.
4. Melt the butter in a small saucepan, stir in the flour and gradually add the milk to make a white sauce. Season with salt and pepper an stir in the cheese. Pour the sauce over the potato and gently shake the dish so the sauce works its way in. Grate a little extra cheese on top and bake in a moderate oven for 1.25 hours or until potatoes are cooked.
Can also include other veges: courgette, corn, carrots, etc.
