Good Housekeeping Easy Weeknights/20 minute meals
In a large bowl, mix ground beef, feta cheese, red onion, italian-style bread crumbs, fresh parsley, egg, oregano, salt and pepper. Form into 12 balls, and thread onto skewers. On cookie sheet sprayed with olive oil cooking spray, roast meatballs at 425 degrees for 15 to 20 minutes or until cooked through. Serve with lemon slices, 1/2 cup prepared tzatziki and 1 pound of red potatoes, roasted with 2 teaspoons olive oil. Garnish with additional parsley.
