heat remaining oil and sautee onions until tender and brown. Add curry paste, and tomatoes. Bring to a boil. Add half coconut milk, return to a boil, then lower heat and simmer until it thickens. Add remaining coconut milk and cilantro. Stir until heated through. Serve with rice.
