Suggest a better descriptionAdd all of the dressing ingredients (except the poppy seeds) to a blender and mix on high until smooth and creamy. Pour into a bowl and stir in the poppy seeds. Set aside.
Add the red potatoes to a pot with water and salt and bring to a boil over medium heat. Simmer for 15 minutes. Add the green beans to the same pot and continue simmering for 10 minutes more. Drain and set aside.
Place 4 eggs in a pot with cold water. Bring to a boil over high heat. Once the water begins to boil, turn off the heat and let the eggs rest in the hot water for 5-6 minutes. Remove the eggs and place them in an ice bath. Peel as soon as the eggs are cool enough to handle.
Heat a non-stick skillet over medium heat. Add the butter and melt to coat the pan. Add the salmon (skin side down) and cook for 2-3 minutes. Flip the salmon and cook for 2-3 minutes on the opposite side.
Place the spring greens on a platter and top with the salmon. Arrange the potatoes, green beans, shallots, and eggs. Top with dressing and enjoy!
