Spray 1 1/2 quart baking dish with nonstick spray. Pulse bread in food processor until crumbs form. Bring large pot of water to a boil. Add green beans and boil until crisp-tender, 6 minutes. Drain well
Meanwhile, for sauce heat olive oil in a large nonstick skillet over medium heat. add dice onion, cook, stirring occasionaly until tender, 6 minutes. Add mushrooms; increase heat and cook stirring frequently, until the mushrooms start to brown, 6 minutes. Shake flour and chicken broth in covered jar with tight fitting lid. Add broth mixture to skillet and cook, stirring, until mixture simmers and thickens, 2 minutes. Stir in green beans and soy sauce; mix well. Transfer to baking dish. Top green beans evenly with bread crumbs and French fried onions. Bake until bubbling, 20-25 minutes.
Make up to 3 days in advance; After adding green beans to the baking dish, cool, cover and chill. When ready to bake remove from refrigerator and return to room temperature, add bread crumbs and fried onions and bake until bubbling, 20-25 minutes.
