This is a simple, delicious salad that is good with a spicy meal or roasted meats. It is a recipe adopted from Fine Cooking magazine, Oct/Nov 2015.
In a small bowl whisk together the lemon juice, the zest and the dijon mustard. Add a dash of salt and pepper to taste. While still whisking drizzle in the olive oil to create the emulsified dressing.
Right before serving toss the remaining ingredients with the dressing and top with the toasted pecans. Season to taste with additional salt and pepper and serve!
Easy to make and delicious.
