Brown the pork in the oil in batches. Place in 3-4 quart dutch oven and add the next ingredients. Deglaze the frying pan with the chicken stock and add to the pot. Barely cover the ingredients with chicken broth or water.
Cover and simmer until thick and meat is tender (approx 1 1/2 hours).
Add salt to taste.
Serve with tortillas (adding salsa to each serving) and a green salad.
