Boil water or use chicken broth - enough to cover items below
Cut off tips of chiles add to boiling broth first (chiles have thicker skin and take longer to cook)
Peel, rinse, and tomatillos, add to boiling broth with sliced onion, and garlic
Cook until right before tomatillos burst
Scoop out tomatillos, chiles, and onions, place in blender with cilantro leaves (repeat as needed)
Pour blended mixture through the collendar
Bring sauce to boil
Season with salt and sugar.
Stuffing and Topping
Cook chicken and shredd
Shredd cheese
Making the Enchilades
Fry tortillas
Dunk fried tortillas in green sausce
Fill tortillas with chicken and cheese and add more sauce
Roll tortillas and top with additional sauce, cheese, black olives and sour cream (reduced with milk)
