Heat griddle or pannini grill to medium high heat. Place pesto on both breads, the gouda on both breads. Place spinach on one side, then the avocado and goat cheese on the other. Sprinkle with salt and pepper. Butter outside of both slices and place on cooking device. Cook until bread is toasted.
