Cut pork into 1/2" pieces. Mix dry ingredients and spices. Coat cubed pork with flour mixture. Melt 1/4 stick butter in skillet. Sauté pork. Add butter as needed. Add two can chicken stock and chopped tomato. Simmer 10 minutes. Add 1/2-3/4 cup salsa. Cook 15 minutes more. Serve with sour cream and tortillas.
