mochi or daifuku is a Japanese sweet. It is a small glutinous rice ball stuffed with sweet filling.
To prepare cornflour for dusting:
- microwave cornflour for 2 mins, let it cool completely before using.
To make mochi:
1. In a microwave safe glass bowl, combine glutinous rice flour, green tea powder and water. Stir to mix well. Add in the sugar, stir till sugar dissolved.
2. Cover bowl with plastic wrap and microwave for 2 minutes. Remove bowl and stir well. Return to microwave for another 30 seconds. Stir-well and check for doneness. If not, put it back for another 30 seconds, be careful not to burn it.
3. Flour the working surface with cornflour. Divided dough into 10 pcs. (Use spoon dip in cornflour to help in dividing). Divide red bean paste into 10 pcs. Flatten a disc of dough, wrap the filling inside and cover with more cornstarch. Shape into balls, put each mochi in paper cases. Serve.
