brush 24 x 30 cm swiss roll pan with spray oil and baking paper
beat egg white first until soft peak, transfer to the bowel
beat egg yolks, sugar until ribbon
fold the white and shift over flour and use a metal spoon to fold
pour into prepared pan, bake 15 mins until skewer inserted comes out clean
remove from oven and pan, turn over
cover with dam cloth
set aside to cool
dust a piece of baking paper with icing sugar
remove tea towel and paper and turn onto sugar
spread anko with cream and roll up
wrap with grad wrap for 30 mins in fridge to set
