Preheat oven to 350F. Coat a 9" round cake pan or baking dish with cooking spray.
Combine butter, sugar and beat until fluffy. Beat in eggs and vanilla
Combine flour, baking powder and salt. Sift into the butter mixture; beat well. Spoon batter into prepared pan. Arrange green tomato pieces in concentric circles over the batter. Sprinkle lightly with cinnamon and sugar.
Bake 50 minutes to 1 hour, until cake is firm and golden.
