Add asparagus, green beans, and peas to boiling water.
Boil 5-7 minutes or until tender.
Meanwhile, add 6 cups of ice water to large bowl.
Drain veggies and immediately add to add ice water.
Let veggies stand until cold, then drain well.
In 10-in skillet, heat 1 tbsp oil on medium.
Add onion and cook 12-15 minutes until tender and deep golden brown; stir frequently.
In small bowl, whisk together lemon, honey, garlic, salt and pepper (to taste) and remaining olive oil.
Toss vegetables with onions in vinaigrette.
