Heat the olive oil in a medium skillet over medium heat. Add the squash and cook, stirring occasionally until soft. Add the sweet potato greens and wilt down, cooking an additional 2-3 minutes. Meanwhile, whisk together the eggs, milk, and salt and pepper. Reduce the heat to medium low and pour the egg mixture over the squash and greens. Cover the skillet and cook for 10 minutes. Remove the cover, sprinkle with cheese and broil until the eggs are set and the cheese is bubbly and brown.
Can make with squash and other greens.
