This recipe is frequently cooked by people from the State of Morelos that live close to the great Balsas river in Mexico. Quick, easy and great tasting.
• In a bowl, combine ¼ of a cup of the Morelos Cooking Sauce with the oil.
• Place fish in a baking dish. Rub one side of each fish with the mixture. Flip and rub the other side with the remaining mix. Cover and refrigerate, marinade for 1 hour.
• Mix the rest of the Morelos Cooking Sauce with the diced avocados. Season to taste and leave at room temperature.
• Preheat outdoor grill and lightly grease the rack. Remove fish from refrigerator about 10 minutes before grilling.
• Wait until temperature of the grill is around medium-hot. Place fish on the grill and sprinkle with salt. Grill for 4-6 minutes covered. Turn around, sprinkle with salt again and let grill for another 4-6 minutes or until fish is fully cooked.
• Transfer fish to a plate and serve with the sauce on the side.
Alternate Cooking Method
• Preheat oven to 350 degrees. Remove fish from refrigerator and let stand at room temperature for about 10 minutes.
• Place fish on a baking dish or cookie sheet and sprinkle with salt.
• Bake for 15-20 minutes until fully cooked but not mushy.
• Transfer fish to a plate and serve with the sauce on the side.
