This kid-friendly favorite is usually a stovetop endeavor, but making four sandwiches using a standard 12-inch skillet meant two batches and double the cooking (and waiting) time. By moving to the oven, we were able to cook all four sandwiches at the same time. To jump-start cooking and crisping our sandwiches, we let the baking sheet preheat in the oven. When it came to the cheese, we found that cheddar was full of flavor but didn't melt as readily as other cheeses. When we combined it with easy-melting Monterey Jack, we found the perfect combination of flavor and texture. Shredding the cheeses also helped them to melt faster and reduced our cooking time even more.
1. Adjust over rack to middle position, place rimmed baking sheet on rack, and heat oven to 450 degrees.
2. Combine cheddar and Monterey Jack in bowl. Brush one side of each piece of bread with melted butter, then assemble shredded cheese sandwiches with buttered side of bread facing outward. Press lightly on sandwiches to compact.
3. Place sandwiches on hot baking sheet and bake until golden and crisp on both sides, about 8 minutes, flipping sandwiches over halfway through baking. Serve.
