1) Mix following into a bowl or ziplock bag
1/8 cup extra-virgin olive oil
1/4 cup balsamic vinegar
2 tsp minced garlic
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2) Add chicken breasts (cut into pieces preferably)
3) marinade for min 30 min
Croutons
------------------
Preheat Oven to 350
1) Take about 4-6 pieces of sliced bread or two full Everything Bagels
2) Tear bread into pieces
3) Mix with EVOO (about 1/8 cup)
4) Bake bread for 10-15 or till you have a little crunch going
Chicken
-----------------------
1) Heat Skillet on med to med-high. Heat to point to where sprinkling water on it will cause water to beed up
2) Oil up skillet with cooking oil
3) add chicken and cook for 8-10 minutes or until chicken is cooked all the way through
Salad
-------------
1) Once Croutons are done, and chicken is cooked mix with salad and diced Avocado
